This part of the Loire is considered Chenin country, and there is certainly a hubristic bias against Sauvignon. When the duo purchased the vineyards to create the domaine, a small parcel of Sauvignon was included in the deal. For many years, it was simply sold off to local négoces, but in 2018, they decided to keep the grapes and make a white wine. The result was quite satisfying and now this small vineyard of Sauvignon has been accepted as part of the Hauts Baigneux family.
