Vinification

Grapes are 100% destemmed and gently crushed. Fermentation and maceration lasts for 20-25 days with two daily punchdowns. Only free run wine is used.

Elevage18 months in 100% 225L new French oak barrels; subsequent bottle-aging for 13 years before release.

The story of Priorat’s revival and Cims de Porrera go hand in hand. Founded in 1996 by Josep Lluíz Pérez, his approach to viticulture and winemaking was born from the scientific method, having obtained a PhD in Biology before moving with his family to the remote, mountainous region. After working to balance Garnacha’s acidity with early harvesting, countless experiments with maceration time, alcohol levels, and grape varietals led him to focus on the old-vine, incredibly low-yielding Cariñena vines.
