The story of Priorat’s revival and Cims de Porrera go hand in hand. Founded in 1996 by Josep Lluíz Pérez, his approach to viticulture and winemaking was born from the scientific method, having obtained a PhD in Biology before moving with his family to the remote, mountainous region. After working to balance Garnacha’s acidity with early harvesting, countless experiments with maceration time, alcohol levels, and grape varietals led him to focus on the old-vine, incredibly low-yielding Cariñena vines.

Though the reputation of Cariñena has drastically (and favorably!) shifted since Josep founded the bodega, the work in the vineyards has remained the same. Now in its second generation headed by Josep’s son Adrià Pérez along with his cousin Marc, Cims remains firmly rooted in ...
