Between 1970 and 1974, Olivier's parents planted 2 hectares of Aligoté in Chitry. They chose to plant the high quality (but low yielding) Aligoté Dorée. Today, Olivier uses these old vines to produce his take on Aligoté, the famous picnic wine of Burgundy, and a house favorite with oysters.
