Oliver Morin produces two cuvées of Chitry. Both come from the domaine's own sustainably farmed vineyards, which are plowed and grass-covered. The wines are vinified with native yeasts and aged on the lees in stainless steel tanks. Constance comes from younger vines and is released early with a fresh and light profile, while Olympe comes from older vines and is aged for at least 18 months in barrels to create a richer, fuller wine. If one wanted to simplify, one could say that Constance is the village wine, and Olympe the 1er cru.
