Bourgogne Chitry Blanc Constance

Olivier Morin

OLIVIER MORIN - Constance_900x
Type

White Wine

Appellation

Bourgogne Chitry

Variety

Chardonnay

Oliver Morin produces two cuvées of Chitry - both come from the domaine's own sustainably farmed vineyards which are plowed and grass-covered. The wines are vinified with native yeast and aged on the lees in stainless steel tanks. Constance comes from younger vines and is released early with a fresh and light profile, while Olympe comes from older vines and is aged for at least 18 months in barrels to give a richer, fuller wine. If one wanted to simplify, one could say that Constance is the village wine, and Olympe the 1er cru.
