Vinification

Grapes are 100% destemmed and lightly crushed. Fermentation for 15 days with several daily punchdowns. Lees stirring and continued maceration for 20 days.

Elevage18 months in 225L French oak barrels (90% used, 10% new). Bottle-aged for 5 years before release.

The story of Priorat’s revival and Cims de Porrera go hand in hand. Founded in 1996 by Josep Lluíz Pérez, his approach to viticulture and winemaking was born from the scientific method, having obtained a PhD in Biology before moving with his family to the remote, mountainous region. After working to balance Garnacha’s acidity with early harvesting, countless experiments with maceration time, alcohol levels, and grape varietals led him to focus on the old-vine, incredibly low-yielding Cariñena vines.
