The grapes are harvested by hand and ferment with indigenous yeasts. The grapes are 100% destemmed, with 75% direct pressed and 25% skin macerated for eight days.
ElevageThe wine is aged on its lees for 10 months (75% stainless steel, 25% in barrels) and bottled without fining or filtration. Bottled with <34mg/L of sulfur.
