Always looking for new ideas to make fun and enjoyable wines from their biodynamic farm vineyard, Nicolas and Karine started making this sparkling red pet-nat in 2020. It's 100% Cinsault, and they decided to make a red because very few other people are doing that and they wanted to see how it would turn out.

Campanian (marine) sandstone on the northern slopes of the Massif de Fontfroide
Vinification
The grapes are destemmed and after 5 days of maceration, a full fermentation is carried out in stainless steel. Grape must is added in at bottling. Unfined, unfiltered, without added sulfites.
ElevageThe wine is then aged 14 months before disgorgement.
