Clay limestone. The Limoux area is the great for growing chardonnay in the south of France due to its altitude of 350 meters and the cooler temperatures providing a long and complete maturation.

Vinification
The pneumatic press is gravity-loaded. Cold settling of the juice at 10°C without enzymes. Inoculation and vatting in 80 hL stainless steel tanks. Fermentation temperature 14°C - about 3/4 weeks of AF. Malo is systematic, except in very hot years.
ElevageAged for 10 months in Burgundy Barrels.
