Soil type
Clay limestone. The Limoux area is great for growing Pinot noir in the south of France due to its altitude of 350 meters and the cooler temperatures providing a long and complete maturation.
Vinification
Hand-picked, gravity-fed into 80 hL stainless-steel vats. Cold maceration in a slow fermentation phase for 3 to 5 days at around 15 to 20 degrees Celsius. Several vats of Pinot Noir, the blend is made up of some vats inoculated, others with indigenous yeast. Some vats contain whole grapes (20-50%). Regular pump-overs. Fermentation temperature 25°C maximum, with a slight rise at the end of AF.
ElevageAged fro 8 months in 80% stainless steel vats and 20% in barrels. Filtration and sulfiting before bottling.
