Viticulture
Soil type

Clay limestone. The Limoux area is great for growing chardonnay in the south of France due to its altitude of 350 meters and the cooler temperatures providing a long and complete maturation.

Vine ageThe grapes come from vines up to 50 years old.
AltitudeLocated between 300 and 500 meters above sea level.
Vinification

The pneumatic press is gravity-loaded. Cold settling of the juice at 10°C without enzymes. Inoculation and vatting in 80 hL stainless steel tanks. Fermentation temperature 14°C - about 3/4 weeks of AF. Malo is systematic, except in very hot years.

ElevageWines remain on fine lees for 8 months. Filtration and sulfiting before bottling.
