Vine ageThe grapes come from vines up to 50 years old.

Vinification

Hand-picked, gravity-fed into 80 hL stainless-steel vats. Cold maceration in a slow fermentation phase for 3 to 5 days at around 15 to 20°C. Several vats of Pinot Noir; the blend is made up of some vats inoculated, others with indigenous yeast. Some vats contain whole grapes (20-50%). Regular pump-overs. Fermentation temperature typically sits at 25°C maximum, with a slight rise at the end of the fermentation period.
