Vinification

Each varietal is destemmed, crushed, and vinified separately. Maceration and fermentation lasting 15-20 days with daily pumpovers. Blended before bottling.

ElevageCariñena is aged for 12-14 months in 400L barrels; Garnacha is aged for 12-14 months in cement. Bottle-aging for 3 years before release.

The story of Priorat’s revival and Cims de Porrera go hand in hand. Founded in 1996 by Josep Lluíz Pérez, his approach to viticulture and winemaking was born from the scientific method, having obtained a PhD in Biology before moving with his family to the remote, mountainous region. After working to balance Garnacha’s acidity with early harvesting, countless experiments with maceration time, alcohol levels, and grape varietals led him to focus on the old-vine, incredibly low-yielding Cariñena vines.
