Nicolas and Karine Mirouze created the "ouze" line of wines as a way of making, fun easy to drink "vins de soif" from their biodynamic farm in the south of France. The wines are all naturally vinified with a light touch and minimal added sulfur. Niouze (pronounced News) is their earliest release from the latest vintage, meant to be enjoyed right away.

The grapes are destemmed and after 3 days of maceration, pressed and then fermented at no more than 70°F with indigenous yeasts. Unfined, unfiltered, bottled with minimal SO2 (<10 mg/l)
