Nicolas and Karine Mirouze created the "ouze" line of wines as a way of making, fun easy to drink "vins de soif" from their biodynamic farm in the south of France. The wines are all naturally vinified with a light touch and minimal added sulfur. Niouze (pronounced News) is their earliest release from the latest vintage, meant to be enjoyed right away.
Massif de Fontfroide
The grapes are destemmed and after 3 days of maceration, pressed and then fermented at no more than 70°F with indigenous yeasts.
