Planted in 2000 by Guillaume's father, Christian Michaut, this .39-hectare vineyard located in a micro-valley of his hometown is part of the birth of Domaine 47N3E. It is a historic, untreated plot with rootstock usually found in the grands crus of Burgundy, which adapt well to the loamy-clay soils of the region, but are demanding and sensitive to disease pressure, requiring Guillaume to work these vines separately. Cairn requires special attention during harvest to ensure grapes are fully ripe.

Vinification
Grapes are immediately pressed, and the clear juice is vinified in stainless steel tanks. Gentle fermentation is guided by the yeast and bacteria naturally present in the grape juice and the cellar.
