Rougeot’s Aligoté comes from the lieu-dit Les Plumes, which is located in the plains below the village of Meursault on the far side of the RN74 road. Rather than viewing Aligoté as a second-class grape, Rougeot treats it with the same serious farming and vinification as all other wines from the domaine. However, to preserve the naturally high acidity and freshness of the Aligoté, Les Plumes is aged entirely in stainless steel. The alternate stripe label at Rougeot indicates that the cuvée has been bottled without any added sulfur.

Vinification
Fruit is handpicked, direct pressed, and cold settled for two days. Fermentation begins spontaneously with native yeasts, followed by malolactic fermentation in barrel. The wine is racked into steel tanks for blending and rests for one month before filtration and bottling.
