Enric Soler writes: "Two casks, two varieties: one Xarel·lo and the other, Sitges Malvasia. The game is in the blend and in the intuition of the one who tastes it. The non-conformist and creative character of the constantly evolving winery is in evidence here. Everything hinges on the grape and its immediate surroundings. Istiu is of very limited production. The select 750 bottles express the affinity between the two varieties used. This wine is more aromatic and has a vibrant acidity. Istiu is pronounced “EUTIU”, and means summer in Catalan."
